Peychaud’s Bitters è stato creato originariamente nel 1830 da Antoine Amédée Peychaud, un farmacista di origine creola, proveniente dalla colonia francese di Santo Domingo (oggi Haiti ), che si stabilì a New Orleans, Louisiana nel 1795. Si tratta di un distillato a base di genziana e altre erbe aromatiche, dal corpo leggero, una delle sue caratteristiche principali è che al palato risulta essere molto più floreale e dolce rispetto ad altri bitters in commercio. Peychaud’s Bitters è inoltre l’ingrediente essenziale per la preparazione del cocktail Sazerac.
